Why didn't Eustace recognize the creature he saw die?

Because he had read none of the right books, he knew nothing about dragons, nor had ever heard of them. (Octesian himself was unrecognizable as himself, presumably because greed for riches had turned him into a dragon.)

How long did the return trip from Mars take, and why was time such an issue?

Almost ninety days, since the ship was 'disbodied' a few minutes after Ransom stepped out.
Time was an issue because the ship would be disbodied in ninety days, whether they made it or not.

The archons of Malacandra and Perelandra? If so, first as "a tornado of sheer monstrosities," darting pillars, "lightning pulsations of flame, talons and beaks and billowy masses of what suggested snow, volleyed through cubes and heptagons into an infinite black void." Then as appallingly huge slowly rolling concentric wheels. And finally as human figures, perhaps thirty feet high, burning white, faintly and swifty undulating, stationary though seeming to be rushing at enormous speed toward one who looked directly at them.

What judgment and healing were passed upon the man whom Susan refused to marry?

He became a donkey and was healed by looking at the statue of Tash in the temple (when it was full of people).
